i have an image, scanned in photoshop, pixelated with the mosaic filter, now I'd like to come up with a key or log of all the grayscale shades from the image

open the doc in Photoshop
"save for web"

On the right hand side of the screen should be the color table. Anything with a white diamond is the colour you're using.

Screen dump it.
