With google adsense, do you tell google what type of website you have, and they give you ads based on your website, or can you pick out any ads or any type of website?

the ads are automatically chosen depending on what content your site has. for example if your site has a page full of text about cars, the ads displayed would be about cars and if it was a page about boats, boat ads would be displayed

Wonder if you have a search engine, do will u get new ads when someone searches for something. Or will you always just have search engine ads

the ads pick up on the current pages content, if you have a search engine, and someone searches, then the ads will taylor to the search results.
