If you want your niche to be about eat healthily, you would talk about things like eg.
1) how to prepare healthy food
2) What kind of food is healthy for consumption etc
In "buy car guide" niche, you will want to talk more about things like eg.
1) What to look for when you want to buy a car
2) How does Car X compare with Car Y etc...
If you want your blog to be niche focus.
Unless your blog is a "general" blog - you can blog about anything under the sun and moon ! Then you can talk about the time you wake up, what you do till the time you sleep and anything in between
If want to advertise your Ads about the best place get cheap and really good car, you would probably advertise it in the "buy car guide", and you probably would not advertise you Ads in the "eat healthy", right ? Don't you agree?
In fact, there are probably alot of "buy car guide" - and you would probably want to find one to place your Ads there rather then look at the "eat healthy" area, right ?
