What blog system are you using, depending on which one you may be able to define custom ordering from the control panel or make some template modifications.

http://codex.wordpress.org/Function_...get_categories gives you some references on category ordering, re "orderby". As I remember it's very limited

I use AVH Extended Categories Widgets to arrange my categories and subcategories. You can also use My Category Order for the same purpose
