Im thinking of investing in an Xbox VGA AV cable, in order to connect it to my LCD Monitor.

Connecting the sound may be a little harder though; Ive checked out my speakers and have realised they dont have a stereo jack OR a minijack to plug the AV cable into. It has one of those screw in types [scsi?]. Does anyone know of any converters or would i just be better off buying some new speakers?

You could consider using USB speaker connection like this:

you can do it see speakers has 2 wires OK clear..and buy a sterio jack only then take the two wires of the speaker...and you will find 3 pins to connect in the speakers 2 wires..leave the Biggest pin and connect the two pins ends to that speaker wire better to use a lead soldering..then connect the jack to the PC Or Walkman or radio or to your lcd out put it really works..I have tested and done pratically .working now..generally we call 3.5mm jack for audio.used in headphones generally..

Get new speakers. Don't cut the cable because will lose warranty.
