Ok, you've probably already thought of this, and if I'm beating a dead horse I'm really sorry... Why is it eBooks you're going for?
For a kid's book, a book that's all about the pictures, printing out a copy on the family's $40 inkjet printer or sitting in front of a screen isn't really going to cut it compared to a real book. Why not use print on demand publishing?
Anyway, as for protecting your content, it depends on what you mean. If you want to give away digital samples on your site, just making them really low resolution should be enough protection (people can't print them out). If you need more peace of mind, and don't mind annoying people, a simple right-click disabling javascript should be able to protect your work.
The ebook itself probably won't get stolen that much, since children's picture books are not really that popular on pirate networks.
Don't disable printing on your ebook, since the material is the sort of thing that almost has to be printed out. As for keeping people from making digital copies... even the billion dollar record industry has not figured that one out yet.
