I'm looking for suggestions on an ecommerce solution that allows unlimited products along with unlimited categories and subcategory nesting. I'm interesting in starting a site that sells trading cards so I may have literally hundreds of thousands of cards listed. Any suggestions on services that would allow me to get a similar store up and running quickly at a reasonable price.

You can use Magento eCommerce for your website. Its so flexible that you can easily tailor it with your business models.
I only use paid shopping carts, less chance to be hacked. Open source shopping carts are installed by the masses so predators tend to attack them more.
