My company has been using OsCommerce for several years and we consitantly have had problems. This system has been in place way before I came to join the company and it becomes an ever growing headach.

What I believe is best for our company is an ecommerce store that we host, have control of the database, but comes with tech support and updates done by someone who is not me. We need unlimited products since our store is ever growing.

It seems like every other week we have a problem, currently people are buying products without seeing the credit card page, and I can't make this error occur on my end.

Since I work for a shopping cart company I will try to address your questions.

Unlimited products is not a big deal, you can find lots of carts out there that will not charge per product. The issue that I see is the hosting yourself and technical support. This can cause technical nightmares, since the shopping cart vendor has no idea what software or database changes has happened on a random server. Updates applied might have these issues as well.

There are ways around this issue, like hosting your website yourself and having your 'buy it' buttons link directly to the store. Multiple carts can support this so you might think about this option. Also, you might think about purchasing software outright and paying for technical support.

I don't know about your product or customer base, but could this be a browser, O/S, or firewall issue?

Since it seems you have some knowledge about oscommerce, you might want to give zen cart a try. I hear they have active forums and a big user base. That might assist you when you run into problems.

most 3rd party shopping cart developers will give you technical support and offer an upgrade service.

two carts that spring to mind are X-cart and Jshop

Are you running the latest version of OSC ? There are many people in the OSC forums that will help you for free or for pay. I have used several differnet carts and OSC is very stable, although documentation is limited.
