He has three products for sale. Two ipn only scripts and one complete paycart script.
If you want to build your own site use the ipn3 and build around it. From your questions and statements I don't think this is the option you should choose.
I chose the paycart model because I am not inclined to spend months getting it all set up. It is an "out of the box" solution. The scripts form a complete site as you see in the demo.
You do have to create or buy your own logo if you want one. I am also thinking about doing 3 custom images (that big picture shop safely) is actually 3 images) to customize that portion of the site. A person could if they were so inclined create an entire new look for the site with a custom theme. At this time, I'm not.
An alternate option for adding a store to an existing site would be to just place the script in a new directory named store or whatever you want to call it.
You will need a php enabled hosting provider with enough space to store all the files and the merchandise. You will need enough bandwidth to serve the site and deliver the downloads. The site has 337 files in 18 folders and uses 1.89 mb of disk space on my hard drive. Add on the database, any sript demos and the files you are selling.
Unless the files you are selling are really large you do not need a large hosting package. I doubt the comple site will use 50MB unless you are one of those stange people who wants to keep every email you ever received on the server.
Bandwidth is going to depend on site traffic, the size of the downloads and the number sold. If you use a gig a month for the first year or two I would be very surprised.
A $5 a month shared hosting account should be plenty for starters.
