If I were to start an ecommerce shop that targets college students, what type of merchandise would sell well? Books? Sweatshirts? Or what? Any experiences selling to college kids?

Nothing. College students never have any money. Not only that, you'd run into a bunch of bureaucracy, red tape, and roadblocks from the large government-subsidized institutions that overcharge for student essentials known as colleges and universities.

I disagree with due respect. College students kind of have lot of money to spend. They spend money from parents, or loan money.
If you wanna sell something to them you have to sell very trendy, up-to-date latest fashion things. Not too cheap stuffs.
For example brand name jeans, shoes etc etc. Books you wont probably make much money unless you plan to buy from them and sell to them online. You have to open a booth or something at the college to promote your business.
There are many things you can do. Where is your target location?

Just thinking about building an online store (in the United States) -- maybe yahoo store.

I'd suggest targeting parents - lots of students have parents who pay for everything. Perhaps "package" deals that include a lot of stuff needed for college (notepads, backpacks, memory cards, etc.) and offer direct shipping to the school while ordering from elsewhere. Graduation packages are huge too.

Nah, If you're opening an Ecommerce store, it's good to have a Niche. don't be too broad. Targeting college students isen't a bad idea. Maybe Microwaves? beanies? Sunglasses? Stuff of that sort. Anything that can get inside a dorm. textbooks is a crowded industry when you look at half.com and stuff.
