I finally figured this whole thing out and made some decisions! I decided to go with First Atlantic Commerce and I have to say I'm glad I did. Since they're not a massive company I don't feel like a small fish in a big pond..quite the opposite in fact! They also have some interesting bespoke services (Virtual Corporation, etc.) that help get around some of the red tape involved.
