I went to Lynda and bought their annual service, and started to watch their XHTML Tutorials. I know that XHTML is the newer more stricter version of HTML.
Just 2 hours ago I wanted to buy a book on learning xhtml so I can take it with me to school. I came across these links : http://www.oreilly.com/catalog/hfhtmlcss/index.html#top
So I'm learning html or xhtml here?
I just want to learn xhtml and not html.
How would the code work together at all?

I really just want to learn XHTML and CSS and not HTML at all.

XHTML and HTML are pretty much the same. XHTML just has some restrictions on how you format things. According to w3schools, "XHTML is a stricter and cleaner version of HTML." You might read there tutorial here: http://www.w3schools.com/xhtml/default.asp
It explains the differences and shows you how to use xhtml.

XHTML is HTML. It's also XML, but CSS doesn't apply to XML, only to different varieties of HTML.

HTML = Hyper Text Markup Language
XHTML = Xtensible Hyper Text Markup Language
XML = Xtensible Markup Language

An additional note would be to explain that XHTML is HTML written in XML, which is why it is stricter (one of the most important differences is that all "tags" -- I know some folks don't like that term -- that are introduced must be closed). XHTML provides the basic framework. CSS is used to provide rules for how that framework is to be displayed.
