Can I edit my own poll thread? And if so how?

You can edit it for a certain amount of time. If there is an edit button next to the quote button on the bottum right you can edit it, if there isn't it's been too long and you can't edit it.

That being said - mods & admins can still edit it if you would like to request that service

Well I don't need to edit a post but a thread that I started, am I able to do that?

I can change the poll - but it is at the max # of options, I would have to eliminate one choice to add one.
