Once you configure the blog feature on here and ping the site, do you have to start a new post before the "Latest Blog Entry" is visible?

Nope, it should show up right away. Your blog has to actually go out and ping us though, and this usually only happens when you create a new post. And make sure the RSS feed in your UserCP contains the correct URL.
