Usually I've use email like domain-where-i-registering@my-domain-for-mail.tld for signups. Mail server receive all emails sent for @my-domain-for-mail.tld and put it to mailbox. This allow to catch all normal and spam emails and determinate who of service owners use my email address for spam. There is some variants how can I get unwanted emails:
a) hackers can use exploit for common service engines and collect member emails. These collections can be used for very effective targeted spam.
b) service owner can sell base to spammers.
c) services can send own messages with very hard or broken unsubscribe option.
I've signup using temporary email only for service demonstration  Of course I can choose usual signup way with special catch-all-mail domain.
But not all webmasters can catch all mail on own domains, and nobody not want to receive spam. One-time email will allow keep main mailbox clean from unwanted messages.
