I bought a Soy Milk maker a long time ago. You can take the ground up beans (the pulp) after making milk and make many other items, like butter, ice cream, and cheese (and other stuff).
I'm a little lactose intolerant, but can handle most dairy foods. However, I am a big proponent of getting people off of cow's milk (it was meant for calves). I do think people can drink it and will, but it's not needed as assumed.
