Certainly not email, that's been done to death, and people are loyal. File hosting is pretty saturated, too, and people might abuse your bandwidth that way.
What language(s) do you work in? My gut wants me to say PHP/MYSQL but maybe that's just what I had for lunch. If you could make something that captures a screen shot of a URL as it's rendered, there are a few other services that do that, but they aren't so well known. I don't know how hard that would be to do, but I think there's less competition.
Half the windows I have open right now are Notepad++ tabs, with a paragraph or two of something I need to remember, something I need to check, old code I took out of a page, but might need to bring back later. I don't like saving 20,000 text files, cluttering up my local filesystem, so I might leave a tab open for three days until I'm done with it. Every now and then I wish I had saved a file.
Google nailed email and calendars, but you could make an online note pad. That should be really easy in any language, and it's something I'd use a lot. Can't speak for anyone else here.
The people in the house next door have a dog that was barking all night long, so I think I've used up all my good ideas for today. But go look around the coding forums and see what people keep running into trouble with. Don't waste your time solving their problem, making a page, and linking to it, but that should give you some ideas what people want right now.
