There are several Programs that produce quality, industry standard, 3D models. Each one has a different learning curve of course as well as focal point.

AutoDesk MAYA Unlimited - More of an all in one 3D Studio software (Objects / People / Effects.)

LightWave - More of an Objects / Effects 3D Software

3DMax - More of an Objects / People 3D Software

Blender - More of an Objects / People 3D Software

And the list goes on, each software being a tad bit different on the user interface.

Take your pick of 3D software's first, then once you own it, ask about tips on modeling & rendering for that specific software

Yes you can easily achieve photorealism with any of the mentioned (or popular) modelling software. Here's a quick tip: Turn on ambient occlusion and global illumination.

Long tip: I'll be writing something similar about this (shading techniques) and I'll post it here if you're interested, when I'm done.
