Since no one else has replied, I'll have a go. I'm by no means a flash expert but I've put some small animations together for the odd website.
As far as text editing goes you ought to be able to select the text objects with the selection tool (black arrow, shortcut V), and then edit them using the text tool ('A' symbol, shortcut T). Moving that tool over the text ought to change the cursor to an I-beam and you can click to put a text cursor into the text which you can then edit. You can also change fonts/colours/strokes etc in the properties panel which changes to show these options when text is selected. The properties panel is usually displayed by default, but you can bring it up from the 'window' menu if not (you need an open document for the choice to be available).
Changing images around can be done quickly using the library panel, again accessed from the window menu. Find the image in this list you want to change over - they are listed by filename and will have the 'Kind' column marked 'Bitmap'. Selecting them will show a preview of the image in the library panel. To change it, right click and select Properties..., and then click Import... in the Dialog that pops up. Browse to the new image and select it, then click the Update button to make the change.
