I have links to some MP3 files.

I want them to start playing in QuickTime when
the user clicks on them.

This is what used to happen on my site
but for some reason now the user has to
download the file first.

Any ideas what is happening?

My QuickTime player says the software is up to date.
It seems to be happening in all browsers - FFox, IE, Safari etc

Seems like twas a Quicktime problem.

I uninstalled Quicktime and re-installed. Works fine now.

What happens if the visitor does not have QuickTime installed?

Why not using a mp3 player like jPlayer -> http://www.jplayer.org/

You cannot actually control what program files will open in from a browser. The end user is in control of that with the file association and default programs.
If YOU set Winamp (for example) to play MP3s that is what they will open in for YOU ONLY, for me they will open in Songbird.
