I'm not sure whether this is what you're after, but there are plenty of useful FireFox plugins that enable real-time editing of CSS/HTML so that you can see the impact you're having straight away.
I think the above functionality is all part of the "Web Developer Toolbar". There are also similar toolbars available for Opera and IE (intended for IE7 I think) - whilst these are worth having sometimes, they aren't as good IMO.
Another useful tool I find (again in FireFox) is the "View Formatted Source" extension, which shows you the CSS applied to HTML elements as you view the formatted source  This is particularly helpful when you get confused by specificity and/or other priorities affecting which CSS rules are taking priority over others (it lists the CSS in the order applied, and also includes line numbers for you to refer to your stylesheet).
Finally, I edit/create my CSS stylesheets in TopStyle Lite which has a built-in preview (only sometimes useful) and I believe it uses IE's rendering engine for this.
