What type of HTML am I using? How can I find this out so I can validate it without it saying it doesn't know what type of xhtml ETC. the document is?

if it don't know what type it is, it's because you do not have a doctype in your page.
go to validator.w3.org tell it to vlidate with the xhtml Transitional, if it validates put the xhtml transitional doctype on it, if it dotn correct the problems. or use html 4.01

You need to give your site a doctype(first line in the markup) and then write markup that complies with the standard. At the moment your site is a mismash of HTML and XHTML so it isn't really anything.
What you should do is give your site the XHTML 1.0 Strict doctype and then set about fixing the errors.

Okay this is odd it won't let me center my tables it says it is invalid markup but how is it invalid if it works.

IT works because browsers are BACKWARDS compatible. they dont want to make it so the really old website dont work because then users will use differant browsers

REMOVE ALL align="center" and have
body {
text-align: center;
}
make all the height/width/border attributes into CSS
like
style="width: 22px; height: 22px; border: 0px;"
it will fix alot.
on your <map> put it inside a DIV
and the background you chaneg into the css
so style="background: url( http://pic.jpg) #000;"
bgcolor you can just put the hex code in the background: ; bit

XHTML also implies that all tags and attributes are lowercase. So be sure that all of your coding is lowercase, I seen you had #FFFFFF, it should be #ffffff. Also, instead of using hexa coding for things like white and black you can use #fff, and #000.
And you should try getting rid of all the tables. Also, since you are using CSS you can use tables for what they are supposed to be used for, which is for strict data recalling. Other than that, you should be using divs. It also shortens up coding when you're using divs, instead of table. You get rid of a lot of unnecessary tags.
The way you are currently using divs is really not the way they should be used. With you using them to format text, you can use <p> to do the same thing that you are doing. Divs should replace your tables, not replace font tags.
