I run a managed hosting company dealing with VMWare, shared/reseller plans and dedicated servers. I don't really know what keywords to use to obtain maximum effectiveness. Can someone help? Thanks!

Login to your google account and use the Adwords Keyword tool

It is a suggestion tool based on Adwords data and clickthroughs, you type in a phrase or a word and it will give you a list.

You then have to decide which ones to target.

Ah alright I get it, so the words they suggest I should be using? They seem pretty relevant. My thing is, I read that it's suggested to not use "a lot" of keywords in your ad campaign. But they never gave a suggested maximum number.

"Several?" would probably work fine.....however, you will have to determine which are best considering the amount of competition....

Selecting the most searched will place you in a larger group...
Selecting a longer "phrase" may bring you more real prospects....

But you are in a large market and may want to consider a phrase that is searched but allows you to stand away from competition....

K/W selection can be a little trickier than most folks realize.......
