Does anyone know how to run a php script every 5 minutes to do something?

My current understanding is that Cron jobs are limited to cgi scripts or compiled executables, but php cannot be accessed.

Is this true? How do I set it up?

It certainly is possible, just have to put the path to your PHP executable first.

You can either use the command line mode of php as the previous poster says or use CURL.
