Just want to know that only submitting in directories (although with different anchor texts) can hurt your rankings ?

It wont. If you change the anchor text randomly it wont hurt the rankings. For one of my new website I got PR4 just submitting to 1000+ directories with 10 random anchor text.

Do we need to have some variety in our anchor texts...? Would it be problem if we used the same anchor texts too often?

yea it can hurt your rankings, you need a couple differnet kinds of traffic showing from differnet types of site's
