Someone told me that the best amount of words for the WORK YOU DO for SEO is 300-600 is that true?

No it is not.

One word will do perfectly well if that is all it needs. and if the subject needs 1,000 words that will be equally Ok.

I've read in forums that if the page will be an article a rule of thumb is to have texts of 300 words at least...and no more of 1000

Usually having more than ~150 words helps.

But your page will not be treated as spam or anything because of having little text.
