If you do go with an SEO company, choose a company that is serious about testing results and improving over time. They (and you) should care about conversion more than search engine rankings. Also, if they won't tell you their methods, don't use them. If they submit to over 3 search engines, don't use them. Ditto with directories. If they are excited about PageRank, don't use them. If they guarantee placement, don't use them. If their "social media strategy" is spamming forums and social media sites, don't use them.
There are very few I would recommend, but if you take a look around sphinn.com, you can probably see which ones actually know what they're talking about by paying attention to the comments.
