They can only crawl the pages that are published on the site. (assuming no restrictions are placed on the site/pages)

So if I convert my site to a joomla site, google won't be able to read it anymore? Or it can read the articles I publish?

If it's published and visible it should be crawlable.

SE crawlers are just browsers without images and javascript
