Correct me if I'm wrong (I often am!) I thought the only way bounce rate can be checked is if you install tracking code on your site. Are you saying that the Google SE can check this anyway?

I noticed that everytime i changed something in my indexed page, my site disappear on google for a month and will come back again after that. I think thats what is happening to you.
