If I link to the first heading of my pages as opposed to linking to the "true URL", will that hurt my search results?

Not directly but kind of, if you're linking to a sub page then that page will be the one to rank for the keyword, so if you want your whole site ranking for a keyword it's good to have pages ranking for it but you want the homepage ranking as well.
