To be honest with you, I think you've got your priorities backwards.
There's no point in trying to build links to a site if the site isn't prepared to receive them. This is where the professional design comes into play. And there are people on this board in your own country (chrishirst comes to mind immediately) that can help you with both aspects and would say the same thing.
Much of your link building efforts will come a lot more easily with a better-looking and more importantly better-functioning site, simply because it's something people will WANT to link to.
(And before anyone thinks I'm soliciting business, I'm not. I'd suggest keeping this UK-based).
Also, you'll probably want to amalgamate your three sites into one bigger and better one if you can. Promoting three sites only works when you have three separate ideas/brands to promote, and in this case you really don't.
