Because they believe that their mediocre website will suddenly appear at the top of the search engines and they will make thousands from Google Adsence!

Because they don't understand that over time (just like with blogs, article submissions, etc), old treads where they posted sig links get deindexed because they are MANY links away from the current threads listed on the main forum pages and are no longer counted by the search engines.

Not entirely true, take for example the longest thread here on WM-T. It's been going since 2006 and has thousands of posts and probably xx times more outgoing links in it and it is still indexed in Google:

It's probably more of a superiority thing. Forums where you exchange and discuss knowledge will have many regulars with much higher post counts. Being a regular, one would most likely be regarded higher since they've been around longer, have made more contributions to the site and are 'known' by other users. Not always, but generally this will be reflected in the post count of a user. Also things like post count dependent titles can have an effect on this too.
