Do you mean specifically target long tail terms using a keyword research tool? i.e. find a bunch of low search terms and target those?
If that's what you mean, I'm not sure that would be effective. The problem with keyword research tools is that they only record what's been done in the past. Whereas p*rn getting millions of searches indicates a trend that will be repeated (i.e. more searches for you in the future), the smattering of searches for your weird niche term might not ever be repeated. When you're dealing with such low search terms, I just wouldn't use a research tool; I would just write stuff the way I wanted to write it, about stuff I wanted to write about.
I've not specifically targeted any terms, long or short tail, in my writing. I've noticed, like you I think, that the accumulated searches for long tail terms far outweighs the searches for the "bigger players" (they account for only 20% of my organic traffic). I think the key is probably to be as comprehensive as you can when writing your content and as a matter of course you'll target many long tail phrases you never even thought of. And funnily enough, that approach involves ignoring search engines and just writing for your human audience.
Your photography site is a perfect example. You know so much about the subject you can probably write reams and reams of stuff naturally that will inadvertently target, and capture, masses of traffic.
