What is considered Duplicate Content?

I was just wondering what Google considers as duplicate content? For example, I write various articles for my websites but if I were to post articles on 2 different sites would it be considered duplicate if everything else on the site is different? Or would even having a duplicate paragraph or 2 be consided duplicate content?

Would changing a few sentences or the order of words around help?
