We have launched a new version of one huge website with more than 10.000 pages, 10 days ago.

Because we changed a link structure, we made redirections to the new URL's. Google still have indexed old url's but if you go to any page from Google, you'll be redirected to the new URL.

Problem is that Google still didn't index new pages. There is old title, description tags and old url's. Also, I was top ranked by some terms, now it disappeared.

I'm very afraid that we done something wrong and I'll loose all my previous ranks which costs us a lot to get them. Or maybe we need to wait bit more?

Did you 301 redirect the old URLs to the new ones? To properly pass over value you need to do the 301 redirects via the htaccess file. Also, it's not uncommon to temporary lose rankings when you 301 redirect, they should return to normal in a few weeks.

When is the last time Google visited your site?
10 days is not that long, especially for a website that big, it might take a while to get all the redirection working.

Did you submit a new sitemap in the webmaster tool? It could help Google find your pages after the redirection.

I can't believe that we have all the time User-agent: * Disallow: / in robots.txt

This is 100% the reason why google didn't index anything until now. Please confirm.

Yes, check it. And if you uploaded your pages on web server it should be index now.

You need to wait until google indexed you new pages

Do I need to make a every single page on my site in this sitemap or just structure with 1-2 levels depth?

give it more time, and eventually google will re index all your pages

You should add all of your pages to your sitemap.

The whole idea of a sitemap is to help Google find all the pages in your site

especially the ones 2 or 3 levels deep or deeper
