How often does google update it page rank and index results?

All the time!

And the useless toolbar display gets less out of date occasionally.

The compilation of data by Google is an on going never ending process. Once a page is found and processed it can still take several weeks for the change or new page to spit out in a SERP or in an Analytics report.

Yesterday I had a new link to my site apear in my analytics link to site page but one of the spiders located it back on the 16th.

there is no exact date.. they've been so unpredictable when it comes to update these days..
