I recently had some pages de-indexed due to copied content which was unbeknown to me as I didnt write the pages, I have the task of re-writing these pages, but the question I have is, should I edit the current page(url) or delete the page and start a fresh, if I just edit the original will the spiders come back and re-index?

They will reindex, but it would probably be faster indexing if you used a new url.

just rewrite the content and replace the content with a unique article. no more changing of URL. google will just index the new page content.
