I have user profiles on my site, over 800 now. Is it better to include them in the sitemap to improve search engine results or is it just clutter?

I would normally forbid profiles being indexed Via robots.txt

But, it depends entirely up to you if you want those pages indexed or not,

Sitemap is the better idea to create.

Do a google for XML sitemap generator there you would be able to easily specify the depth before generating the sitemap and in my personal opinion its better to index the pages and all the content rather than user profiles in the sitemap.
