Well my horror site was at the very top of page 2 in a search for the keyword 'upcoming horror movies'. Then it gets knocked back and now 3 sites are ahead of my site on page 2 (basically knocked back 3 notches). Whats so stupid about it is 2 horror sites which were nowhere to be seen get to land on page 1 out of nowhere.

Same here. I've seen articles from the year 2000, sites that haven't been updated in a year or more, and blogs on page one for some of my horror movie website related keywords. I can bend a little when it comes to the blogs, but those articles from 5 years ago and sites run by lazy webmasters shouldn't be up there.
Just be jeloues of those two websites, and worry about other websites to. Optimize as best you can and then just build links google will realize you are better than the rest.

Are they new sites. then they will have some bonus for some fresh content and will stabilize to a steady position and that steady position will matter than a day or 2 jump for some sites.
