I always try to make the title I submit under match ( or pretty closely match ) the title on my home page. I don't pay for directory links, which means typically there's no "deep linking" and it goes straight to my domain. So it seemed the best thing to do is use the title, which more or less describes my site. Anyway, I always use the same title when submitting to any directory, although LeoSeo's advice about using a few different titles to go after a few keywords is worth thinking about.
More importantly, though, make the title something you would click on yourself.
Also, submit to the/an appropriate category, obviously, but if your site honestly fits into more than one category, choose the one with less entries. Or at least this is what I've been doing. You stand out more, if you're worried about getting in your chances are better, and while there's very little SEO benefit, there's more from a page that has less links. Some directories don't have a photography category, so I'll choose between "artists" and "visual arts," or whatever happens to be available, by how many entries, and what quality they are. ( Not what PR, but are they good sites? )
Finally, there's not that much SEO benefit to directories, and most of the traffic is going to be the person who approves or denies your listing, and other webmasters looking around. For most sites, that's "low quality" traffic. So, like Chris says, don't worry about it too much.
