We want to eventually have a forum in the site, I heard that Blue host has something special (some sort of script) that enables that. But do the others? And how to they compare?
Lots of hosts have automated software installers, it's not something very special. I prefer to install these open source applications (forums included) manually though.

If the host has Fantastico, you will easily be able to install phpbb, or SMF forums. I suggest phpbb as it seems the more popular of the 2 and the most supported.
Bluehost is OK. Just another Shared web host. It is true taht they have many customers and that means they are good enough. But don't expect to get something special as a service and featurs from them.
Fantastico should be offered with most hosts I would image. So you shouldn't have any issues installing scripts easily.

Fantastico is a cPanel thing. While for most control panels there are equivalents, proprietary control panels are likely to have a limited number of applications they can install. The customer should ask for the list of applications if this is important to him.
