In the end, it all depend of the traffic you get.
But I would not go on the shared hsoting if I was you.
Video processing demands a lot over the CPU, and this is something bound to get you banned by your hoster.
Next, the flexibility comes to mind. When using advanced features like phpffmpeg, you might need to enable certains features of PHP (max upload limit size, or max upload time, for exemple) that usually shared hosting don't allow.
I'd recommand you to go the VPS path at first, if you have experience over Linux system (if not, found someone that has, because you will need it with a VPS) you will be free from all those limitations.
Except if the physicall server holds to many virtual servers, but I don't think any hoster will divulge how many nodes are running on the server.
