Will repointing their domain wreck their exchange?

I have been working on a website for a company i know and I have it all re-done and working.

However their current host is crap at support and doesnt do php/mysql hosting (why god why?)

Anyway I have set them up a Catalyst2 account no problems and am ready to move the domain to them, however I have found out their mail goes through their domain too to their exchange server.

How do I go about repointing their domain without killing their company email?

is the exchange server located on the existing host?

If not it will probably only be a DNS A record for mail.hostname and the MX records that need replicating.

If you are only moving the web host it may only be the www A record that needs updating on the DNS server

No I dont think the server is hosted on their hosting account, it is just the A record.

So simply mimicing the A-Record at the new host should mean a seemless switch over?

It should be, the IP isn't changing so it should take 3 or 4 hours for the change of nameserver.

DNS will still be cached in that time.
