If you have an important site, or would consider your online work important in anyway (Ex: E-commerce, forums, blogs, company site, etc) then your best bet is to get quality service.
I would say services like Hostgator and GoDaddy are subpar at best, while they work fine for many I wouldn't host a site on those servers that had a lot of use or was an important money making site for me. I'm actually in the process of finally migrating one of my sites away from Fatcow, as the service is too slow.
You get what you pay for in webhosting. Pay $3 a month, you can rest assured there are many people on that server and its probably oversold too much. This attributes to slow page loads, downtime, etc. Some companies manager their overselling much better than others, some don't. The fact GoDaddy doesn't have a standard ticket based support or live chat on their site, which seems to almost be industry standard now-days is shocking. I'll buy my domains using a coupon code everytime ($7.49 dot coms!), but wouldn't want to host a site their. And i've read too many horror stories about HostGator, so yeah..
I've hear nothing but good things about http://Innohosting.com , they offer great services and realistic packages. Chris and Rameen run the company and are very active on WebHostingTalk, quick to answer questions and they run a quality company. I'm in the process to get either a reseller or a VPS from them soon.
