In no particular order:
1. 24/7 support via email, with at least 8/5 support by 800 line.
2. Support for the platforms and technologies that we use. If I'm building a site in ASP, I don't care about a host that specializes in PHP.
3. Backbone. Are they on one or at least reasonably close to one?
4. Number of employees. At least 4 is a good number, since 4 or more generally means the company isn't some kid in his parents' basement with a Linux box going "look at me, I can host websites".
5. Reviews. What do other people say about the host?
6. Plans. Do they have more than one? Can people upgrade? How easy is it?
7. 30-day money back guarantee. This is a must.
Those are the things I generally look for. I know it's not three, but a good hosting customer will have a bunch of things they're looking for.
