Jeyce, reliable hosting actually comes in a VPS. True, you can get good performance, and good reliability from shared hosting - but a VPS is the way to go for any serious site where any downtime or issues will result in loss of income.
luper, I guess you may not be watching this thread anymore, but if you are - I'm a little dubious over the "ecommerce options" that you refer to since this is nothing more than a marketing ploy. Every hosting plan that is capable of SSL/TLS connections (i.e. virtually all) has ecommerce capability.
Even that may not be required if you're not collecting any sensitive information on your own server (many payment gateways have you redirect to their server instead for that step).
That said, I've heard more negative feedback regarding 1&1 than I care to mention - but I have no personal experience of them, so cannot make any definitive claims.
Decent VPS providers will offer a managed VPS which is basically as easy for you to use as a large shared plan. You benefit from increased control - usually including things like: - Rebooting your VPS via a control panel
- Installing any script engines / frameworks etc. that you require (including specific versions that you may require), without any fear of these having to be updated for the sake of other clients, or for that matter kept on an old version for the sake of other clients - you should check what your managed VPS provider would want to charge you to install such things though... (if anything)
- The ability to use the control panel of your choice
- A guaranteed slice of server resources (although this is a pitfall as providers can easily oversell on this by overloading servers in the usual way that many providers try to do - including some big ones too)
As with any type of service (particularly hosting) - it's always a good idea to look around and consider your options. It costs nothing to enquire what each provider will offer, and it often helps to enter those discussions with an open mind.
Certainly beware of signing up to the first provider you come across without checking out everything about them (and the alternatives).
