I'd say that kids is closest to providing you with a helpful response to your question.
My guess is that you're concerned about what will happen to your email when you change hosting provider. Yes?
As part of this process, you would usually change the nameservers for your domain as kids/helicopter suggested. In this case the DNS propagation period will mean that some emails destined for your domain will arrive at your old host, and some emails will arrive at your new host (providing you've configured mailboxes etc. before changing the nameservers!).
So in terms of receiving emails, it's important to keep both old/new hosting accounts open during the changeover so that new emails aren't lost - and also ensure that you check your old hosting provider for emails about 24 hours after you've changed the nameservers.
Regarding emails that you've already received... Any emails you've already downloaded (or have stored in gmail) will be safe - but any still on your old hosting provider's server should be downloaded (either to gmail or to your computer).
Now you mention that you use gmail for emails; do you retrieve them via POP3, or do you use gmail's domain email service (i.e. are emails delivered to your mailbox with the hosting provider, and then downloaded by gmail for you - or are they sent directly to gmail)?
