I think that on the drop-down menu the rollover green should be more lightened. also the navigation text would look much better in pure white

Try a very light gray for the text. Look at the chicken salad color scheme from LadynRed's link. I think the black background may be what is throwing you off. Try beige towards a green tint as the background.
