Somewhere in the options/preferences you can set the default extension for the different types of page I would suggest.
Other than that, set it as you save it. You will need to set Windows to show file extensions first though.
Windows Explorer -> Tools -> Folder -> View -> Uncheck "Hide file extensions for known file types"
Next answer is;
No, you can't have a page without an extension.
It's done with either rewriting the physical file names using .htaccess trickery, or using subfolders and index pages.
