I think Odesk is the best, because it's the only system available that guarantees your pay at an hourly rate: so if a client cops out on you, you still get paid. There's also no up-front fees (as either buyer or seller) to post jobs or apply to assignments. It was recently featured on Good Morning America, and has a huge number of buyers looking for freelancers.
A few tips: make your portfolio and profile as complete as possible, or you won't stand out. Take as many tests as possible, but only post the ones you do really well for. Be as specialized as possible: don't post interests in categories that you are only vaguely qualified for. Write personalized cover-letters when you apply for assignments, they work much better, and won't be marked as spam.
I got my first assignment there within a week of trying, and have been doing it steady for about a year now.
